I'm more of a coffee guy, but for the second year in a row last Saturday I had a chance to learn about the intricacies of tea at a fundraiser for Pivot International. We learned the Chinese approach to preparing several kinds of delicious tea, and in the process found out about its cultivation, the different regions of the world where tea is produced and the effect of their soils and climates on its quality and taste. 

We also tasted several really delicious teas. 

You know, I'm going to have to write about Pivot some time. I'm on the Board of this fine young organization, and I could not be prouder to be associated with it. Pivot's mission is to provide assistance to children with special needs in the developing world. At the moment, its work is in Nicaragua exclusively, but as we expand I believe we will eventually extend Pivot's reach to other countries in the region. Looks like a dragon to me... I always donate my photographic services to Pivot's events when I am able. So here are some photos of this year's tea tasting workshop, which was hosted by Salon de thé Oasis - a place I also recommend. The owners there are generous, friendly, and knowledgeable, and they really are passionate about their tea!  Thank you to them for donating their space and their precious time to Pivot's efforts!
